Whip up kefir fritters
In Russian cuisine small thick pancakes, fried in oil, are called pancakes. Prepare pancakes from yeast and yeast-free dough. In this recipe, whip up kefir fritters. Kefir can be replaced with any sour-milk product - yogurt, fermented baked milk, liquid sour cream, even ordinary homemade yogurt from sour milk. The recipe is simple, but even in such a simple matter as pancakes on sour milk, there are subtleties. Pancakes are not always obtained lush, often fall off. The key to success is the correct consistency of the test.
From the very liquid, you will get large flat pancakes, since the dough spreads very much. If the dough is thick, then the pancakes may not bake, because the frying time is limited. If you master the process, then by breakfast you can always fry lush pancakes on kefir. It is very fast and delicious!

Ingredients for kefir fritters
- 250 g of kefir;
- 185 g of wheat flour;
- 1 chicken egg;
- ½ teaspoon of baking powder;
- ½ teaspoon of soda;
- 1 tablespoon of vegetable oil + frying oil;
- salt, sugar;
- butter for serving.
A quick way to cook kefir fritters
Break the chicken egg into the bowl, add a pinch of salt, mix with a whisk. You don’t need to try especially hard, it’s enough to destroy the egg structure and achieve uniformity.
Next, add kefir at room temperature to the bowl, which can be replaced with any dairy product. Kefir does not need to be specially heated; it is enough to remove it from the refrigerator in advance.
Sift wheat flour into a bowl. Use top grade wheat flour or whole wheat flour to make kefir fritters.
Next, add baking powder and baking soda. I advise you to wipe the soda through a fine sieve so that clumps of clumps do not get into the dough. Add sugar or not - decide for yourself if the pancakes are for dessert, then usually they are served with jam, in my opinion, sugar in this case is useless. If the pancakes are for a meat dipper (Belarusian dish), then all the more sugar is not needed.
Mix the ingredients thoroughly, add vegetable oil. Kefir dough does not need to be stirred for a long time, just mix to make it without lumps and leave for 10 minutes. You don’t need to mix it anymore!
The finished dough for fritters on kefir should look like in the photo - drain from the spoon slowly, with a wide, thick ribbon. If it flows down in a thin stream - add a little flour, if it falls in lumps - add kefir or a little cold water to achieve the desired consistency.
Lubricate the frying pan with a thick bottom with frying oil, heat it. Scoop the dough with a tablespoon from the edge of the bowl, put the pancakes on a heated pan so that there is free space between them. We fry on medium heat, as soon as the edges become a little golden, bubbles will appear on the pancakes, turn them over to the other side.
On the other side, fry for a couple more minutes until they become golden.
Put the pancakes on a plate, put a small piece of butter on each hot one.
Fry until the dough ends. Pancakes on kefir are ready, serve hot on the table. Enjoy your meal!
